Taco Soup


Need a no fuss, minimal prep, slow cooker meal with plenty of protein and fiber?


The star(s) of this recipe are the BEANS!


Beans are incredibly healthy. Filled with fiber, protein, vitamins, and minerals, this little superfood has it all! Higher intakes of beans and legumes (an average of half a cup per day) has been associated with a 30-40% reduction in all cause mortality (death due to any reason).


Eat more beans, y'all! And feel free to add even more to this recipe!


You will need:

1 lb cooked chicken, shredded (like rotisserie or canned chicken)

1-15 oz can black beans

1-15 oz can red kidney beans

1-14 oz can diced tomatoes

1-11 oz can diced tomatoes with green chiles (like Rotel)

1-4 oz can sweet white corn

1 pouch Ranch dressing mix

1 pouch taco seasoning

1-4 oz can green chiles *optional, for extra spice


Directions:

Cook and shred the chicken, if needed. I recommend using a rotisserie chicken.

Without draining any of the cans, add all ingredients to a slow cooker. Cook for 2 hours on high or 4 hours on low.

Serve with tortilla chips, shredded cheese, green onion, diced avocado, and sour cream, if desired.
