Egg Muffins
The easiest recipe for your Meal Prep Monday!
Preparing breakfast ahead of time is the easiest way to make your mornings a breeze. Meal prepping breakfast is a huge time saver, especially if you are running out the door in the mornings. You can even save these in the freezer to meal prep several weeks at once!
There are endless flavors and ingredients that can be added to egg muffins so you never get sick of them. Use your favorite veggies and add extra protein to use up ingredients in your fridge and prevent food waste!
You will need:
2 tbsp olive oil spray
10 large eggs
2 cups spinach, chopped
1 cup sharp cheddar, shredded
1 tbsp garlic powder
Salt + pepper, to taste
Directions:
Preheat oven to 350 F. Spray muffin tin with olive oil. Crack eggs into a large bowl and whisk. Chop spinach and add into the bowl, stir to combine. Portion the mixture into the muffin tray, filling each cup 3/4 of the way full. Sprinkle with shredded cheese on top. Cook on 350F for 20 minutes. Remove from oven, let cool and portion into meal prep containers for the week. Freeze, if desired. Enjoy!
Make it high protein: Add a breakfast meat such as sausage, ham, ground turkey, bacon or cottage cheese along with egg mixture to add extra protein!
