Ground Turkey Stuffed Peppers

The perfect easy and delicious recipe for Cinco de Mayo!


Cooking stuffed peppers at home is great way to celebrate Cinco de Mayo, and a healthier alternative to going out a Mexican restaurant. The garlic make this dish extra flavorful, and the added spinach is an easy way to sneak in extra veggies!


Using ground turkey instead of ground beef reduces saturated fat. This recipe is also high in fiber from the brown rice and black beans. Add a side of guacamole for healthy fats for your celebration!



You will need:

2 Tbsp olive oil

1/2 large white onion, diced

4 bell peppers, whole

1 lb of ground turkey

2 cloves garlic, minced

1 pouch brown rice

1 can of petite diced tomatoes

6 cups chicken broth or stock

2 large handfuls of spinach

2 handfuls of shredded cheese, for topping


Directions:

Cut the tops off the bell peppers and place in a glass pan. Cook on 400 F for 20 minutes. While cooking, heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft. Add the ground turkey, minced garlic, and taco seasoning to taste. Cook until turkey is browned. Add the beans, tomatoes, and brown rice. Stir well, then add the spinach and continue to stir. Remove bell peppers from oven and add mixture to bell peppers, then top with shredded cheese. Cook on 400F for 10 minutes. Remove from oven, let cool and enjoy!


Make it lower carb: Omit the brown rice, and use extra ground turkey or veggies to replace the brown rice.
