Healthier Chicken Salad


Yes, chicken salad can be healthy!


I swap two thirds of the mayonnaise for plain Greek yogurt. I love the tangy flavor the yogurt brings, and there is still plenty of mayonnaise to hold the mixture together.


I am an Onion Girl, so I always have plenty of red onion in my recipe, but feel free to make it your own!


Serve on sandwiches, on top of green salads, or as a snack with some whole grain crackers.



You will need:

1 lb shredded chicken, like rotisserie

1 cup plain Greek yogurt

1/2 cup mayonnaise

1 shallot, diced

3 green onions, chopped


Directions:

Using a large fork, combine all ingredients in a large bowl to even consistency.


Additional add-ins: chopped pecans, chopped red grapes, or diced celery


Store in an airtight container for up to 4 days after the chicken was cooked.
