Cottage cheese is… controversial, to say the least, but it’s so high in protein, and in this dish I PROMISE you won’t even taste it - it just makes the sauce extra creamy!! And everything comes together in less than 30 minutes!
Serves 4-6
Total time: 30 minutes
You will need:
2 Tbsp olive oil
1/2 large white onion, diced
3 cloves of garlic, minced
1 lb lean ground turkey
Salt and pepper to taste
Spices (optional): 1 tsp each of thyme, basil, garlic powder, and onion powder
1 8 oz box Banza elbows
1 24 oz jar traditional pasta sauce
1 cup cottage cheese
1 5 oz container baby spinach
Jumbo skillet
Cutting board
Knife
Large stockpot
Blender
Directions:
In a jumbo skillet or stockpot, heat the olive oil. Add the diced onion and garlic, sauté for 1-2 minutes, then add the turkey. Add salt, pepper, and spices. Cook until browned. Add the spinach and allow to wilt down.
Cook the Banza pasta according to package directions.
In the meantime, add the pasta sauce and cottage cheese to a blender and blend until smooth.
Once the turkey is cooked and the pasta is done, add all ingredients to the skillet. Turn the heat on low and allow everything to simmer in the sauce for 5-10 minutes.
Serve with a side salad or roasted veggies for a balanced meal!
